So the weekend is nearly over but don’t worry Monday mornings aren’t so bad with this quick breakfast. You can make the granola topping tonight in under an hour and eat it tomorrow. The ingredients are all things you’ll be able to find in your cupboard. This breakfast is really yummy and is also a great source of protein and will keep you going until lunch. I hope you like it as much as me. Simply add the granola to yoghurt in the morning with some fresh fruit and you’ll have a great Monday morning!
Combine 50g of runny honey with 75g of peanut butter and microwave until melted. Set the oven to 180 degrees celsius and line a small baking tin. Place 100g oats into the baking tin and cover with the melted peanut butter and honey. Mix together well. Bake for around 20 minutes. Leave to cool for ten minutes. Then break the cooked oats up into small chunks and store in an airtight container. In the morning combine with yoghurt and fruit for breakfast.
Top Tip: You can melt dark chocolate over the top of the oats if you prefer a sweeter breakfast!
