Okay, so this isn’t something you can bake but all this cold winter weather makes me want to eat soup. I don’t think you can beat a homemade soup and its easy and cheap to make to. Here is my basic vegetable soup recipe which serves 4:
- 3 sticks of celery
- 1 leek
- 4 carrots
- half a broccoli or a cauliflower.
- 3 boiled potatoes (or leftover roast potatoes from a Sunday lunch)
- Vegetable stock cube
To make the soup roughly chop the vegetables. Then heat a tablespoon of olive oil in a large pan and add oregano and basil. Next, fry all the vegetables until they start to soften. Boil the kettle and pour water over a crumbled stock cube in a measuring jug. Pour into the sauce pan and top up water levels so that all the vegetables are covered. Leave to boil for around 10 minutes when the vegetables will be soft enough to blend. Use a hand-held blender to blend the soup in the pan. Leave to simmer for a few more minutes. I find that the soup is great served with cheese and use stale bread to make croutons. To make the croutons simply fry some stale bread in a little oil until they are brown in colour and wipe off excess oil with kitchen towel.
